Pistachio Cherry Granola

2/3 c. brown sugar

1/4 c. apple cider (or juice works, too)

2 c. oats

2/3 c. chopped pistachios

2/3 c. Grape-Nuts type cereal

2/3 c. dried sweet cherries

1/2 c. sunflower seeds (shelled)

1/2 tsp. cinnamon

1/2 tsp. salt (optional)

In a  large, skillet combine the brown sugar, cider, cinnamon, and salt until the sugar is dissolved.  Add oats and all other ingredients to coat.  Stir frequently for approximately 5 minutes, allowing oats to brown.  Spread the mixture out on a large cookie sheet to cool.  If you like a crunchier granola, toast it in a 300-degree (F) oven for 10-15 minutes.  When the granola is completely cool, break it up into bite-sized pieces and store in an air-tight container. 

Yield:  10 servings, 1/2 c. each, approximately 340 calories OR 20 servings, 1/4 c. each, approximately 170 calories.

Delicious with yogurt and also as a crumble on top of baked fruit.  Try it with other nuts, fruits, and spices, if you like!

Blonde Brownies

1 c. flour

1/2 tsp. baking powder

1/4 tsp. salt

1/8 tsp. baking soda

1/4 c. rolled oats

1/2 c. nuts (pecans or walnuts), chopped or broken

1/3 c. butter or margarine

1 c. brown sugar

1 egg

1 tsp. almond extract

chocolate chips (or other chips you prefer)

Melt the butter or margarine (I do this by putting the whole mixing bowl in the microwave for just 15 seconds or so…you don’t want it too hot or it will cook the egg).  Add the brown sugar, egg, and extract to the butter and mix well.  Stir in the oats.  I usually just put all of the dry ingredients into a sifter together and add it in two portions to the butter/sugar mixture, stirring well.  Mix in the nuts. 

You are going to pour/spread this into a 9 x 9 sized pan (or a 9” round cake pan will work, too).  Make sure the pan is greased with butter or spray oil.  Sprinkle about ½ cup of chocolate chips over the top (these will sink in as the brownies bake).  Bake for 25 minutes in a 350-degree oven.  The top should be golden brown and a little more done around the edges.  If it sinks in the middle a little bit when it cools, that’s okay.

OR, to make it fancy for Santa:

Don’t put the chocolate chips on top before baking.  Bake as usual.  When the brownies are done baking, spread chocolate chips over the top of the still hot brownies.  This will use about a cup or so of chips.  Let them sit for a few minutes to get melty, then spread them out with a knife like you are icing a cake.  Additionally, you can drop some more chopped nuts on top of this before the chocolate gets too hard.  To make them easier to cut with the chocolate on top, I’d suggest putting it in the fridge for a few minutes to get the chocolate to harden up.
